Zucchini Rolls with Herbed Cheese – 80 Calories
This little treat makes a great snack and an even better appetizer. What better way to treat yourself than with this sugar-free, high protein snack.

3 small zucchini, cut lengthwise into ¼-inch thick slices, discarding the outer slices
1 tablespoon olive oil
3 tablespoons nonfat ricotta cheese, excess liquid drained
½ teaspoon lemon juice
2 cups lightly packed baby spinach
1/3 cup lightly packed fresh basil leaves
sea salt and freshly ground pepper to taste
Preheat the broiler.
Place the zucchini on a foil-lined broiler pan, drizzle with the oil, season with salt and pepper, toss to combine, then arrange in a single layer. Broil until browned on one side, about 5 minutes, then set aside to cool to room temperature while you make the cheese.
In a medium bowl, stir together the ricotta, lemon juice, and pepper. Drop 1 teaspoon of the cheese mixture ½ inch from the edge of each zucchini slice. Top each mound of cheese with a few spinach leaves and a small basil leaf. Roll the zucchini, then place, seam side down on a platter and serve. Use toothpicks to secure, if desired.
