Greek tomato shrimp with spinach rice combines two traditional Greek dishes for one incredible meal.

  • 4 oz peeled and deveined shrimp
  • 3 oz canned tomatoes
  • 1/4 cup diced yellow onion (save half for the spinach!)
  • 1 tsp olive oil
  • 1 minced garlic clove
  • 2 tsp sliced black olives
  • 1/4 tsp Greek seasoning
  • 1/2 tsp Greek honey, optional
  • 3 oz fresh or frozen spinach
  • remaining diced yellow onion
  • 1/4 cup uncooked medium grain rice or 6 oz. cauliflower rice for low carb
  • 1 minced garlic clove
  • 1 tsp olive oil
  • Water
  • 2 tsp crumbled feta cheese
  • 1 tsp flat leaf Italian parsley, optional
  • Lemon zest, optional
  1. Press RICE on your Instant pot to heat. Rinse the rice and drain. 

  2. Add 1/2 cup water to the pressure cooker then insert the trivet before transferring rice to a heat-safe bowl along with spinach, onion, garlic, olive oil, and ΒΌ cup of water. 

  3. Mix well and place the bowl on the trivet.

  4. Place lid on the Instant Pot and set to 22 minutes on NR (natural release).

  5. Transfer rice to meal prep container when done and garnish with lemon zest (optional).

  1. As the rice is cooking, heat 1 teaspoon of olive oil in a skillet. 

  2. Add the tomatoes, diced yellow onion, garlic, Greek seasonings and honey if desired. Follow with the shrimp and olives. 

  3. Cook until shrimp are just pink then pour into one side of the meal prep container and top with feta cheese.

  4. When ready to eat, heat in the microwave or bake in the oven (be careful not to overcook the shrimp). Garnish with fresh parsley.
