Ingredients:
4 large tomatoes, roughly chopped
1 cucumber, peeled, seeded, and roughly chopped
1 clove garlic, peeled
1 tablespoon hot sauce
¼ cup olive oil
¼ cup shaved Parmesan cheese *
Sea salt and freshly ground pepper to taste
Preparation:
In a food processor, combine the tomatoes, cucumber, garlic, hot sauce, olive oil, salt and pepper then blend until slightly chunky. Allow to sit at room temperature for 15 minutes, then garnish with the Parmesan shavings and serve.
*Tip – Chilled Parmesan cheese can be shaved with a vegetable peeler
