Smoky Beef and Bean Chili – 225 Calories

1 tablespoon olive oil
1 pound lean (90% or more) ground beef
1 medium onion, diced
4 canned chipotle chiles in adobo sauce, seeded and minced, plus 2 tablespoons adobo sauce
1 (28-ounce) can crushed tomatoes with their juices, preferably low sodium
2 ½ cups water
2 (15.5-ounce) cans black beans, preferably low sodium, drained and rinsed
sea salt and freshly ground pepper to taste


Place a large saucepan over medium-high heat. Add the oil followed by the ground beef and cook until browned, about 5 minutes. Add the onion, chipotles, and adobo sauce and continue cooking until the onion is tender. Pour in the tomatoes, water, and beans then season the mixture with salt and pepper to taste. Bring to a boil over high heat, then reduce to a simmer. Continue cooking for 15 minutes to allow the flavors to marry, then serve.
