1 cup Mandarin orange segments packed in orange juice plus 3 tablespoon of juice
1 tablespoon whole-grain mustard
1 tablespoon olive oil
4 cups loosely packed baby arugula
½ cup chopped or slivered almonds
sea salt and freshly ground pepper to taste
In a large bowl, whisk together the Mandarin orange juice, red wine vinegar, mustard, olive oil, salt, and pepper. Add the arugula and orange segments and toss to combine. Sprinkle with almonds and serve.
