Low Glycemic Recipe Warm Beet Salad – 165 Calories

If you’ve never cooked with baby kale or collard greens, don’t panic! Both are easier than ever to use in your kitchen, because they come pre-cleaned and pre-packaged in the salad section. This salad may seem exotic, but the flavors are mellow and familiar. A beautiful comfort-food salad to pair with baked chicken, a dollop of cottage cheese, or grilled pork chops.

Serves 4
1 1/2 tablespoon olive oil
2 cloves garlic, finely chopped
8 cups collard greens or baby kale
1 (15 ounce) can small whole beets, drained and diced
¼ cup golden raisins
3 tablespoons sliced almonds
1 1/2 tablespoons freshly-squeezed lemon juice
Salt and pepper to taste

Drizzle ½ tablespoon olive oil in a nonstick skillet. Heat over medium-high heat, adding garlic once the oil is hot. Stir in hot oil, cooking for about 1 minute, then add the greens and allow them to cook for just about 20-30 seconds, or until they start to wilt slightly. Transfer greens to a serving platter. Top with beets, raisins, almonds, a drizzle of olive oil, lemon juice. Sprinkle with salt and pepper to taste. Serve warm.
