Makes 2 servings

1 small cucumber
4 ounces white albacore tuna, drained
1 teaspoon dried dillweed
3 tablespoons purple onions

2 tablespoons fat-free mayonnaise
1 tablespoon extra light olive oil
2 tablespoons lemon juice
Salt and pepper to taste
1 tablespoon fresh chopped parsley

Slice cucumber in half, lengthwise. Use a spoon to remove the seeds from the center of the cucumber. In a small bowl, use a fork to mix together dillweek, onions, mayonnaise, olive oil, and lemon juice. Season to taste with salt and pepper. Spoon the tuna salad into the center of the cucumbers. Sprinkle with parsley for garnish. Serve and enjoy!
