1 tablespoon olive oil
1 clove garlic, sliced
12 cups spinach
½ lemon
Salt and fresh-ground pepper to taste

Heat a large skillet over medium-high heat. Add olive oil and toss in garlic. Stir garlic constantly until golden brown. Transfer to a small bowl and set aside. Add spinach to the skillet. Squeeze lemon juice over the spinach, then cover and allow to wilt, about 60-90 seconds. Remove, toss in garlic. Salt and pepper to taste, if desired. Pairs nicely with Italian-themed dinners, grilled meats, and vegetarian main dishes.
