Low Glycemic Recipe Thai Spicy Carrots – 76 Calories

This fun twist on spicy carrots is ridiculously delicious! Try serving it alongside Peanut Satay, or other Asian-themed meals for a scrumptious side dish that packs a low-GI punch!

Serves 2
2 cups baby carrots
½ cup water
1 clove garlic
1 1/2 tablespoons srircha
1 teaspoon red pepper flakes
1 tablespoon cilantro, chopped

Place baby carrots and water in a large skillet. Cover and cook over medium-high heat until softened, about 15 minutes. Remove lid, drain any excess water. Return carrots to hot stovetop, add garlic, sriracha, and red pepper flakes. Cook just until hot, about 60-90 seconds. Top with cilantro. Serve and enjoy!
