1 green zucchini, cut into very thin ribbons
1 yellow squash, cut into very thin ribbons
1 clove garlic, finely chopped
2 tablespoons olive oil
Salt and pepper to taste
1 tablespoon fresh chopped parsley
Preheat oven to 400 degrees. Cover a baking sheet with parchment paper. Spread zucchini ribbons across the parchment. Sprinkle with garlic, drizzle with olive oil. Salt and pepper generously. Place in oven and cook for 20-25 minutes, stirring once or twice as the zucchini roasts to evenly brown the edges of the zucchini. Remove, serve immediately, garnished with a sprinkle of fresh parsley, if desired.
