Whenever you can find fresh asparagus

Serves 4
1 pound asparagus
1 ½ cups cherry or grape tomatoes
2 tablespoons olive oil
2 tablespoons balsamic
Salt and pepper to taste
¼ cup reduced-fat feta
Preheat oven to 400 degrees. Cover a baking sheet with parchment paper. Clean asparagus, then place on parchment paper. Sprinkle with cherry tomatoes, drizzle with olive oil and balsamic vinegar. Place baking sheet in oven and cook for 18-22 minutes, until the asparagus is cooked through and slightly browned on the edges. Remove from oven, sprinkle with feta, salt and pepper to taste. Serve and enjoy!
