Caprese—tomatoes, basil, and mozzarella—is such a simple, perfect way to eat a salad. The classic combination gets a quick and easy twist when the basil is pureed into a simple dressing. This salad is perfect with steak, pasta, and tastes incredible topped with pine nuts!

Serves 4

2 roma tomatoes
2 ounces fresh mozzarella, sliced

2 tablespoons olive oil
1 clove garlic
4 tablespoons basil
2 tablespoons lemon juice

Salt and pepper to taste

Slice the ends off of the tomatoes, then slice each tomato into 4 slices. On two serving plates, place a tomato, top with mozzarella, a second tomato, and top it finally with mozzarella.

In a small food processor, blender, or with a hand blender, puree the olive oil, garlic clove, basil, and lemon juice together. Add salt and pepper to bring out the flavors of the dressing. Drizzle dressing over the each tomato tower. Serve immediately and enjoy.

FLAVOR TIP: Drizzle a teaspoon of balsamic vinegar for extra authentic flavor!
