We’ve revamped this version to be hearty, healthy, low GI, and full of more flavors and colors than a Mardi Gras parade. Serves 4

2 cups broccoli
1 orange, peeled and diced
3 tablespoons dried cranberries
2 tablespoons diced purple onions
3 tablespoons sliced almonds
2 tablespoons bacon bits

FOR THE DRESSING:
2 tablespoons fat-free mayonnaise
4 tablespoons white vinegar
2 tablespoons extra light olive oil
1 teaspoon soy sauce
4 drops stevia
Salt and pepper to taste

In a large bowl, toss together broccoli, oranges, cranberries, purple onions, almonds, and bacon bits. In a small bowl, whisk together mayonnaise, vinegar, olive oil, soy sauce, and stevia. Drizzle over broccoli mixture. Toss until well coated. Salt and pepper to taste. Cover salad and place in fridge for about 30 minutes to allow the flavors to come together. Serve and enjoy!
