Hearty Ratatouille Stew with Turkey – 247 Calories

This light, yet filling soup combines all the flavors and fiber of a ratatouille with the lean protein of ground turkey.

1 tablespoon olive oil
8 ounces ground turkey
1 large eggplant, cubed
1 green bell pepper, seeded and cubed
1 zucchini, cubed
1 (24-ounce) jar pasta sauce, low-sodium if possible
2 cups low-sodium fat free chicken broth
1 teaspoon crushed chile flake (optional)
freshly ground pepper to taste


Place a large saucepan over medium-high heat. Add the oil followed by the turkey and cook, breaking it up as you go, until it is well browned, about 7 minutes. Add the eggplant, bell pepper, zucchini, salt, and pepper and cook until the vegetables are tender, but still slightly crisp, about 4 minutes more. Pour in the pasta sauce, broth, and chile flake (if using). Bring the mixture to a boil, then reduce to a simmer and cook until the vegetables are tender, about 6 minutes.
