1 tablespoon olive oil
1 medium onion, small diced
3 cloves garlic, minced
6 medium beets, peeled and small diced
4 cups low-sodium fat free beef broth
¼ cup nonfat sour cream
sea salt and freshly ground pepper to taste
Place a large saucepan over medium heat. Add the oil followed by the onion and cook until tender. Add the garlic and cook just until you can smell its aroma. Increase the heat to high, then add the beets, broth, salt, and pepper. Bring to a boil, then reduce to a strong simmer over medium heat and cook until the beets are tender, about 20 minutes.
Blend the soup in small batches, then strain. Ladle the soup into bowls and top each serving with 1 tablespoon of sour cream.
