Fruit and Cream Crostini – 102 Calories
This little snack is just the right combination of protein and fiber to give you a burst of energy while keeping you full.

1 small whole wheat baguette, sliced on the diagonal into 10 pieces
¼ cup low-fat cottage cheese
¼ cup fresh sliced strawberries
¼ cup blueberries
¼ cup raspberries
½ (11 ounce) can mandarin orange slices in light syrup, juices drained and reserved
Preheat the oven to 400ºF.
Place the baguette slices on a baking sheet and toast in the oven until browned and crisp, about 7 minutes. Set aside to cool.
In a small bowl, stir together 1 tablespoon of the reserved mandarin juice with the cottage cheese. Spread an even amount of the cottage cheese mixture over each slice of bread, top with the fruit, and enjoy.
