Biggest Hurdle: Eating breakfast. I used to only have coffee at 5:30 a.m. and not eat anything for at least four hours. Sometimes, I would skip breakfast altogether and then become ravenous by lunchtime.
I Overcame It By: Finding a healthy breakfast I love: Joy’s Sweet Potato Skillet (with pepper, onions and lowfat cheese). When I was a kid, my mom would make fried potatoes on Saturday mornings, so this morning meal reminds me of my childhood, only it’s much healthier!
