Ingredients:
Zest and juice of 1 lime
1 teaspoon toasted sesame oil
8 ounces green beans, trimmed and cut into 1-inch pieces
½ English cucumber, cut in half lengthwise, then sliced on the diagonal
4 radishes, trimmed and sliced
¼ cup chopped fresh cilantro
Sea salt and freshly ground pepper to taste
Preparation:
In a medium bowl, whisk together the lime zest, juice, sesame oil, salt, and pepper. Add the green beans, cucumber, radishes, and cilantro, then toss to combine.
