Ingredients:

2 tablespoons white wine vinegar
2 tablespoons olive oil
4 cups lightly packed baby greens
¼ red onion, thinly sliced
1 pound cantaloupe, rind and seeds removed, then thinly sliced
4 ounces crumbled nonfat feta cheese
sea salt and freshly ground pepper to taste

Preparation:

In a large bowl, whisk together the vinegar, oil, salt, and pepper. Add the greens and cantaloupe, toss to combine, then top with the feta.
