Ingredients:

8 ounces fat free feta, cut into 12 equally sized cubes
1 teaspoon orange zest
½ teaspoon fennel seeds
12 black olives
12 green olives
¼ English cucumber, cut into 12 pieces
freshly ground black pepper to taste

Preparation:

In a small bowl, combine the feta cubes, orange zest, fennel seeds, and pepper then gently toss to combine. Thread the cucumber followed by the olives and finishing with a feta chunk onto the skewers. Serve immediately.
