Ingredients:

¼ cup fresh orange juice
2 tablespoons olive oil
1 ½ teaspoons mustard
1 pound beets with greens, beets peeled and shredded and stems removed from the greens, then cut into ribbons
2 medium carrots, peeled and grated
sea salt and freshly ground pepper to taste

Preparation:

In a large bowl, whisk together the orange juice, olive oil, vinegar, mustard, salt, and pepper. Add the beets, beet greens, and carrots then toss to combine.
