WHEN DID YOU START DEVELOPING A WEIGHT PROBLEM?
My weight issues really began after the birth of my daughter. I just could not seem to take the weight off.

HOW DID YOUR WEIGHT AFFECT ANY ASPECT(S) OF YOUR LIFE?
Once, when my daughter was about a year old, I was standing in CVS with a food long sub sandwich in my hand and her on my hip. An man behind me said, “She’s so cute, I can’t believe you’re expecting again. When is it due?” I was mortified to tell him I was not pregnant and had just not lost the baby weight from having her. I yo-yo dieted for the next 20 years and developed a number of health issues as well.
WHAT WAS THE “TURNING POINT” THAT GOT YOU STARTED ON YOUR WEIGHT LOSS JOURNEY?
At 45 years-old, I was suffering with increasingly painful and swollen joints, as well as other health issues that had started around age 35 and were progressively worsening. My mother has debilitating rheumatoid arthritis, fibromyalgia, vasculitis, neuropathy, and other health issues, and has been disabled since her 50’s. I was terrified I was heading down that same path.
HOW DID YOU GET STARTED?
After numerous doctors’ visits and blood tests with no answers, I decided to investigate nutritional options. My daughter recommended the Forks Over Knives documentary, which my husband and I watched on February 15, 2013 and became instant plant-based, whole food consumers.
HOW LONG AFTER YOU STARTED DID YOU BEGIN TO SEE RESULTS OF YOUR WEIGHT LOSS EFFORTS?
I began to see small results within days. After 2 weeks, my sleeping issues had greatly improved, my adult acne no longer required prescription medication, and my joints were getting better as well.
WHAT WAS THE HARDEST PART?
I’ve resolved my inflamed and painful joints, lowered my cholesterol from 220 to 141, dropped over 50 lbs., resolved adult acne that previously required prescription medication, and recovered from sleeping issues. Sometimes I have to pinch myself to believe this is the same body I had just a few short years ago. Honestly feels like I traded the old one in for this newer model.

I received my certification in Plant-Based Nutrition through eCornell , T. Colin Campbell Center for Nutrition Studies, and am licensed as a Food for Life instructor with the Physicians Committee for Responsible Medicine.
Currently, I teach nutrition education and cooking classes at medical facilities and other venues in Western NC and Upstate SC, as well as doing public speaking events. My other passions include: my faith and family, daily hiking with my German shepherd, yoga.
WHAT DOES YOUR DAILY DIET LOOK LIKE COMPARED TO WHEN YOU WERE HEAVIER?
We ate the standard American diet with lots of hamburgers, hot dogs, steaks, and when we thought we were eating healthy, it was chicken.
HOW DOES YOUR PHYSICAL ACTIVITY COMPARE TO WHEN YOU WERE HEAVIER?
I have always walked in the woods with my dogs, even when I was heavier, and that hasn’t changed. The only things I’ve added to my exercise are occasionally mountain biking with my husband and doing yoga 3 times a week.
MY WEIGHT LOSS TIPS & TRICKS
- In the beginning don’t overwhelm yourself with long term goals like, what will I be doing 10 years from now. Set short goals like, I am going to try plant-based for 4 weeks to see what if anything it can do for me personally.
- Especially in the beginning, plan all meals and snacks and make sure you have everything on hand in your kitchen.
