Roasted Brussels Sprouts and Apple Salad – 215 Calories
This light, yet filling soup combines all the flavors and fiber of a ratatouille with the lean protein of ground turkey.

2 tablespoon olive oil, divided
½ pound brussels sprouts, trimmed and halved lengthwise
1 tablespoon lemon juice
4 cups lightly packed baby greens
1 sweet apple, such as Gala or Fuji, cored, quartered, and sliced thinly
2 ounces Parmesan cheese, shaved*
Preheat the oven to 400ºF. Place 1 tablespoon of the oil, brussels sprouts, salt, and pepper on a baking sheet and toss to combine. Roast the brussels sprouts until browned and slightly tender, about 15 minutes, stirring halfway through. Allow to cool for 10 minutes.
In a large bowl, whisk together the remaining 1 tablespoon of oil, lemon juice, salt, and pepper. Add the brussels sprouts, baby greens, and apples to the dressing then toss to combine. Top the salad with the Parmesan shavings and serve.
*Tip – A vegetable peeler can be used to make thin shavings of the cheese.
