Low Glycemic Recipe Roasted Brussels Sprouts – 99 Calories
If you’ve never liked Brussel Sprouts, this simple dish may just change your mind! Slightly sweetened with honey, these brussel sprouts caramelize slightly as they roast. A great way to get your greens, perfect when served with steak or grilled chicken!
2 cups Brussels sprouts, halved
½ sweet onion, sliced
2 tablespoons olive oil
1 tablespoon honey or agave
1 tablespoon dried cranberries
Salt and pepper to taste
1 tablespoon fresh parsley (optional)
Preheat oven to 400 degrees. Cover a baking sheet with parchment paper. Spread Brussels sprouts across the parchment. Sprinkle with onions, drizzle with honey and olive oil. Salt and pepper lightly.
Place in oven and cook for 20-25 minutes, stirring once or twice as the sprouts cook to evenly brown the edges. Remove, serve immediately, garnished with a sprinkle of dried cranberries and fresh parsley, if desired.
