Serves 4

1 head Iceberg lettuce
¼ cup crushed pork rinds

1 clove garlic
3 tablespoons fat-free sour cream
4 tablespoons lemon juice
3 tablespoons olive oil
3 tablespoons parmesan cheese
2 drops stevia
Salt and pepper to taste

With a sharp knife, slice the iceberg lettuce into four 2 ½” lettuce “steaks”. Alternately, slice the lettuce in half, creating four lettuce wedges. Place on a large plate.

In a blender, small food processor, or small bowl with a hand blender, combine garlic, sour cream, lemon juice, olive oil, parmesan cheese, and stevia until smooth. Salt and pepper to taste. Drizzle dressing over salad wedges. Sprinkle with pork rinds. Serve immediately and enjoy!
