½ cup roasted sunflower seeds
½ cup dried cherries
¼ red onion, sliced
sea salt and freshly ground pepper to taste.
In a large bowl, whisk together the lemon juice, olive oil, salt, and pepper. Add the kale, sunflower seeds, cherries, and onion then toss to combine. Serve immediately.
