Ingredients:

2 cups pineapple chunks
½ cucumber, peeled and cut into chunks
2 tablespoons fresh mint leaves, plus 2 sprigs for garnish
½ cup water
1 cup ice cubes

Preparation:

Combine all of the ingredients,except for the garnish, in a blender and puree until smooth. Pour into chilled glasses and garnish each serving with a sprig of mint.

Yield: 2 servings
