¼ cup olive oil
3 tablespoons freshly squeezed lime juice
1 teaspoon finely grated ginger
3 cups sugar snap peas, ends trimmed and cut in half crosswise on the diagonal
4 scallions, thinly sliced on the diagonal
1 carrot, coarsely grated
2 red bell peppers, stemmed, seeded, and thinly sliced
sea salt and freshly ground pepper to taste


In a large bowl, whisk together the olive oil, lime juice, ginger, salt, and pepper. Add the sugar snap peas, scallions, carrot, and bell pepper then toss to combine.
