Cheesy Cauliflower Grits – 126 Calories
These super creamy grits make an excellent alternative to traditional grits because of their higher fiber content and because they are lower in fat.

6 cups low-sodium fat free chicken broth
1 head cauliflower, leaves removed and roughly chopped into small pieces
4 ounces fat free cream cheese
2 tablespoons grated Parmesan cheese
Sea salt and freshly ground pepper to taste
Place the chicken broth in a large saucepan over high heat and bring to a boil. Season with salt then add the cauliflower and simmer until tender, about 15 minutes.
Place the cream cheese in a large food processor and blend until fluffy. Drain the cauliflower and add to the food processor. Pulse the cauliflower mixture until it resembles the consistency of grits. Season with salt and pepper to taste, then pulse once more to combine. Top the grits with grated Parmesan and serve.
