What a tasty way to get your Beta-carotene and fiber. This smoothie combines sweet carrots with spicy ginger and cayenne and makes the perfect pick-me-up.

Ingredients:

2 cups canned carrot slices, drained
1 ½ cup apple juice
½ cup apple sauce
1 tablespoon chopped fresh ginger
1/8 teaspoon cayenne
pinch of salt
stevia to taste
1 cup ice cubes
carrot sticks for garnish

Preparation:

Combine all of the ingredients,except for the garnish, in a blender and puree until smooth. Pour into chilled glasses and garnish each serving with a few carrot sticks.

Yield: 2 servings
