Ingredients:

5 cups low-sodium fat free chicken broth
1 teaspoon grated fresh ginger
1/2 cup quick-cooking brown rice
1 boneless, skinless chicken breast, cut into ½-inch strips
1 cup bean sprouts
2 scallions, thinly sliced on the diagonal
sea salt to taste

Preparation:

Place the broth and grated ginger in a large saucepan over high heat. Bring the broth to a boil, reduce to a simmer, season with salt, then add the rice. Cook for 3 minutes, then carefully place the chicken breast in the hot broth. Simmer the chicken until it is no longer pink, about 6 minutes. Remove the soup from heat, stir in the chili sauce, then top with bean sprouts and scallions.
